The story

Still hot from the oven, vanilkové rohlíčky — buttery little crescents — must be rolled in vanilla sugar, and they are among the most constant fixtures on any plate of Czech cukroví. The recipe rarely changes from one generation to the next because it is already “perfect” in its simplicity: just butter, flour, ground walnuts or almonds, and sugar. The hot cookies are rolled in a mixture of sugar and real vanilla (not artificial flavoring) right after baking, so that the sugar partly melts and forms a delicate, glossy crust that cracks at the first bite. They share their crescent shape with the Austrian and German Vanillekipferl, evidence of a common Central European baking heritage that crosses national borders. For Czech families in the diaspora, rohlíčky are often the first cookie children learn to make, because the process is quick and simple and the result — tender, sweet, fragrant with vanilla — is almost impossible to ruin.
