The story
Serbian Orthodox Easter, Vaskrs, falls on May 2 in 2027. The day begins with eggs: families crack dyed eggs against each other in the morning, and tasting the Easter eggs ends the long fast, as people in Užice told Radio Free Europe's Serbian service in 2017. Lunch follows, richer than on ordinary days, as much as one can manage, and lamb is usually on the table. When the daily Kurir priced the Easter table in April 2022, a 1.5 kg lamb roast cost about 2,500 dinars, against 2,000 for the same weight of pork, the other holiday roast. The magazine Lepa i srećna calls roast lamb the dish that adorns the Easter table in many households. Serbian home recipes keep it simple. Recepti.com roasts 2 kg of lamb over 2 kg of potatoes, covered, at 180°C for about two hours, turning the meat once. Lepa i srećna's Zlatibor-style version seasons it with bay and rosemary, puts a spoonful of kajmak on the potatoes and serves it with green salad and young onions. Order bone-in shoulder or leg from a butcher a few days ahead, and serve the roast with a lettuce salad and a dish of scallions.
